- 2 ½ cups flour
- 1 tsp baking powder
- 1 tsp salt
- 3 tablespoons oil

Around ¾ cup warm water
Method
- Combine the dry ingredients. Add oil and warm water then mix.
- Knead on a floured surface for 5 minutes, then allow the dough to rest at room temperature wrapped in gladwrap for at least 10 minutes.
- Give the dough a quick light knead and divide into 10-12 balls. Roll each out to approximately 25cm across.
- Cook in a hot pan (you can lightly oil the pan but usually don’t need to if its non stick). Cook for 30-60 seconds until they start to turn brown. Turn and cook on the other side. The tortillas may bubble up a wee bit, that is perfectly fine.

Once they are cooked place in a damp tea towel to keep them soft. If not using straight away they can be reheated in the oven but wrap them in foil first.
Note: You may find it takes some practice to get the tortillas perfectly round but the reality is they don’t have to be perfect. They will still taste yummy 🙂
