The Flour Tortilla Tragedy

Tortillas are such a versatile food. You are limited by your imagination only when it comes to fillings. Tortillas can be used in many different ways for example as wraps, to make quesadillas or as an accompaniment to curries to name but a few.

I was eager to try the Edmonds recipe on page 155 as I believe everyone should have a tortilla recipe up their sleeve as they are so much cheaper to make and usually they taste way better than shop bought.

The dough was greasy

I say usually taste way better because at the risk of sounding like a negative Nelly this recipe wasn’t good. As in really really not good. In fact I was so disappointed with the end result that even though I made it a couple of weeks ago I couldn’t bring myself to write about it until now.

The wraps were brittle from the beginning

The ingredient list was pretty standard but reading through the quantities I knew straight away there was going to be an issue. The problem with the recipe is the amount of oil – there is way too much. When the mixture comes together as a dough it’s just way too greasy. The recipe says to knead the dough for 3 minutes or until smooth and elastic. The dough stays greasy no matter how much it’s kneaded.

Attempts to fold them were disasterous

Once cooked the finished tortillas are a weird mix of oily yet brittle. Now, as you know, when I make the Edmonds recipes I follow them to the letter but I admit that this time I broke the rule but here is the reason why. When I cooked the first tortilla it was already brittle. If I had just covered them with foil as suggested they would have just ended up worse. So I actually placed them in a damp tea towel in the hope it would soften them up. So once they were all cooked I served them up to be used as wraps with various fillings. As predicted as they were “folded” they broke into pieces. They weren’t pliable at all and they tasted really odd, greasy and floury almost.

I honesty wouldn’t use this recipe it was an absolute waste of time and effort. I would suggest if you want a really good recipe that I have used dozens of times to try this one. The end result is soft and yummy tortillas. Any leftover tortillas can be frozen without a problem.
