Asian Noodle Salad

Ingredients

  • 1 red onion, sliced
  • ½ telegraph cucumber, cut into matchsticks
  • ½ cup toasted slivered almonds
  • 2 packets instant noodles

Dressing

  • ¼ cup white sugar
  • ¼ cup white vinegar
  • 1 Tblsp soy sauce
  • 2 tsp sesame oil
  • ½ tblsp sweet chilli sauce
  • ½ cup olive oil

Method

  • In a saucepan combine all of the dressing ingredients. Heat on low heat until the sugar dissolves. Set aside to cool.
  • Cook the instant noodles per instructions but do not use the sachets provided. Once cooked. Drain. Set aside to cool.
  • Combine in a salad bowl the cucumber, onion and almonds. Pour over the cooled dressing and toss well.
  • Just before serving toss through the cooled noodles.
