Ingredients
- 1 red onion, sliced
- ½ telegraph cucumber, cut into matchsticks
- ½ cup toasted slivered almonds
- 2 packets instant noodles
Dressing
- ¼ cup white sugar
- ¼ cup white vinegar
- 1 Tblsp soy sauce
- 2 tsp sesame oil
- ½ tblsp sweet chilli sauce
- ½ cup olive oil
Method
- In a saucepan combine all of the dressing ingredients. Heat on low heat until the sugar dissolves. Set aside to cool.
- Cook the instant noodles per instructions but do not use the sachets provided. Once cooked. Drain. Set aside to cool.
- Combine in a salad bowl the cucumber, onion and almonds. Pour over the cooled dressing and toss well.
- Just before serving toss through the cooled noodles.
