
Marinate the chicken for at least 30 minutes
Chicken kebabs or skewers whatever you choose to call them are usually a favourite with everyone. They are super easy to make and are a really good way to get your 5+ a day in as well.

Add any vegetables you like
The recipe on page 143 has a lovely soy and chilli sauce marinade with it. You can either cook them on the BBQ or under the grill so they are great for when you need to take something for a BBQ at friends or just as a quick meal for the family.
This recipe uses onion, capsicum and courgette but you can put anything you like on them. For example, button mushrooms or cherry tomatoes go really well on kebabs. So this recipe was enjoyed by everyone. You can serve the kebabs with salad, rice or even steamed vegetables. I chose to serve mine with a quick noodle salad.
